Umeshu, sometimes referred to as plum wine, is made by steeping Ume fruits (while still unripe, green and mildly poisonous) in Japan’s other famous alcohol, shochu, and sugar.
Often seen with the fruit still in the bottle, plum sake works great straight, on the rocks or as a cocktail mixer.

what is sake?
Japan's ancient national drink, sake (or moree accuretely, nihonshu) is an alcoholic beveerage made from rice and a few natural ingredients.
sometimes referred to as rice wine, sake is actually brewed more like beer, to around 15% abv.
the basic craft of how sake is made has remained unchanged for centuries, but small variations in production brings the wide variety of styles and grades of sake available today - including sparkling and fruit sake.
there really is something for every taste.
the result of this national, low-intervention brewing philosophy is a clean, delicious drink that's free of sulphites and preservatives, as well as gluten-free and vegan-friendly. being lower in acidity and tannins than wine, sake is also universally recognised as being superior and versatile accompaniment for many foods, not just sushi!
